spiced carrot bran muffin


This is a healthy bran cereal breakfast with the added benefits of carrots and raisins and packed full of flavor ~ all in a muffin

Ingredients

Dry
  • 220g plain flour,sifted
  • 2.5 tsp baking powder
  • 1/8 tsp ground cardamom
  • 75g light muscovado sugar
  • 150g grated carrots
  • 70g raisins
Liquid
  • 2 large eggs
  • 4 tbsp melted butter or vegetable oil
  • 230 ml milk
  • 80g bran cereal
Method
  1. Preheat  oven to 220C. In a large bowl soak the cereal in the milk and set aside for 10 minutes. Whisk together dry ingredients to blend and set aside.
  2. Lightly beat the eggs in another bowl and add the butter or vegetable oil and whisk to combine. Add this liquid mixture to the soaked cereal mixture and stir well till all is mixed well.
  3. Add the dry ingredients, stir quickly and briefly.  Do not overmix the batter.  Don’t worry if it’s a bit lumpy as it’s meant to be that way.
  4. Spoon into a prepared muffin tray till 2/3rds full and bake for 20 minutes until lightly browned and firm to the touch.
  5. Let cool in the tin for a min and then turn to wire rack to cool.

When thoroughly cooled, these muffins can be cling-wrapped and frozen for 1 month.
